Shredded Brussels Sprouts Salad


This delicious and nutrient packed salad is perfect for a side dish to lunch or dinner or even to have for a healthy snack. Just top with your favorite protein source and it is the perfect dish! This salad is easy to make and fun to eat.
This salad is Gluten-Free, Grain-Free, Dairy-Free, and Vegan.
Serves: 4

¾ lb. Brussels Sprouts, cut into 1/8 inch ribbons
¼ c walnuts, chopped
2 cloves garlic, chopped
2 Tbsp goji berries
2 Tbsp hemp seeds
1 Tbsp nutritional yeast
Salt, to taste

1. Saute garlic.
2. Add shredded Brussels sprouts and walnuts, and cook for 2-3 minutes, until slightly wilted and warm. Add water as needed to prevent sticking.
3. Remove garlic and Brussels sprouts from pan, and toss together with other ingredients.
4. Season with Pink Himalayan Salt. Enjoy!
