I am so proud of these muffins.
I love pumpkin and figs… SO why not put them together?!
I calculated the nutrition facts for you guys too because that’s obviously important??
Each muffin is 105 calories per muffin and 10g of sugar.
Recipe makes 20 muffins
6 whole eggs
6 egg whites
1 cup Tigernut Flour
1 can pumpkin purée
1 and 2/3 chopped dried figs
5 figs cut in quarters to place on top of each muffin
3 Tbsp raw organic honey
1 Tbsp vanilla extract
2 tsp baking powder
1 Tbsp cinnamon powder
Preheat oven to 350F.
Whisk eggs in large bowl.
Add pumpkin purée, tigernut flour, chopped figs, vanilla extract, and baking powder.
Pour into muffin tins.
Sprinkle with organic cinnamon and place 1/4 Fig on each muffin.
Place in oven and bake for 15-20 minutes.
Allow to cool and enjoy!!
