Roasted Cranberry Quinoa Bowl.

A yummy, nutritious breakfast!
Simple, yet full of flavors and rich in nutrients.
I prepped and made the quinoa ahead of time to make my life easier.
I also prep ahead to hold myself accountable.
It works every time!
I usually make a big batch in the beginning of the week.
Prepping leads to success!
Quinoa Bowl Ingredients:
3/4 cups cooked quinoa
1/2 cup coconut milk (serve warm as an option)
1/4 cup roasted cranberries
1 Tbsp hemp seeds
Recipe for roasted cranberries
1 bag of fresh cranberries (roughly 4-5 cups)
1 Tbsp melted coconut oil
1 Tbsp 100% pure maple syrup
1 tsp ground cinnamon
Preheat oven to 425F
Wash and rinse cranberries
Mix all ingredients together (cranberries, coconut oil, maple syrup, cinnamon)
Place in oven and roast for about 15-20 minutes or until wilted and cooked thoroughly.
Allow to cool.
